HARVEST AND VINIFICATION
Since the set-aside of these grapes in the fruttaio (fruit-growing area) lasts until January/February, it is necessary to harvest them carefully by hand during the harvest. The pressing is soft, so that only the flower must is used. The oak barrique to which it is placed has the task of completing the maturation for about 24 months.
