The grapes used for this excellent wine come from a careful selection of the grape husks in spring, manual defoliation, and selection of the bunches.
HARVEST AND VINIFICATION
Harvesting takes place from about mid-September. The harvest is carried out by hand, in plateau with subsequent withering for about 90 days. A careful processing in the cellar brings the wine to age in oak barrels for about 36 months, followed by a bottle aging of about 1 year.
COLOUR DRY RED TYPE
ALCOHOL CONTENT 17,5°.
SCENTS wine reminiscent of ripe red fruit that invades the mouth and leaves a full and intense flavor.
SERVING TEMPERATURE 16° 18° C.
GASTRONOMIC PAIRINGS It is best served with braised meats, roasts and game, but also spicy, mature cheeses, jams and mustards. Try it with baked lasagne and cheese gnocchi. The special combination with chocolate.
