VINEYARDS Corvina 30%, Corvinone 60%, Rondinella 5% and Croatina 5%.
A first selection is made during spring season, removing the second gem. The grapes, before being harvested, are defoliated from the leaf wall, making a thinning of the bunches, to improve the solar radiation. (maximum 5-6 per plant).
HARVEST AND VINIFICATION
With the harvest, in the third week of September, the grapes are placed in the plateau for a drying period of about 50/60 days. The processing in the cellar is slow and precise, the wine is put to mature in oak barrels for about 24 months. After bottling, the wine is aged in bottle for a minimum of 6 months.
COLOUR ruby red.
ALCOHOL CONTENT 16%.
AROMI vino dal gusto rotondo e avvolgente, contorna la bocca decantando le proprie doti. Sentori importanti di frutta matura, in particolare di ciliegia.
SERVING TEMPERATURE 16° 18° C.
GASTRONOMIC PAIRINGS Red meats and sausages are the ideal accompaniment, followed by aged cheeses.
